Just Fresh Kitchen Café

Just Fresh and Shook Kelley worked together to create a new unique dining experience, merging quick service, superb food and green-building principles into a new trend known as “Fine Casual” dining.

The franchisor-owners were eager to take a risk and revamp an existing brand that was suffering for 10 years into a new Kitchen Café concept, with a new menu and design package, to raise the bar with gourmet fresh food and fine dining food in a fast casual atmosphere. 

Shook Kelley’s team spent a year designing the new generation Just Fresh Kitchen Café and recreating the menu with the operations team at Just Fresh. The goal was a great-tasting, healthy menu for breakfast, lunch and dinner with a strong emphasis on natural, minimally processed foods and enticing variety – ideal for an increasingly healthy-focused palate, taking the focus off the cookie-bread centered menus at many other establishments. The results were designed to attract customers morning, noon and night. The Just Fresh Kid’s menu is extensive and offers healthy alternatives to the run of the mill fast food fare. The concept is unique in the nation’s food service industry.

The 3,600-square-foot restaurant prototype features at least 18 design details dedicated to green principles. Ceiling tiles in the dining area and restrooms contains 70 percent total recycled content. Countertops consist of 100 percent recycled glass solid surfacing, free of volatile organic compounds. Carpet tile in the dining area contains Eco Solution-Q fiber and uses EcoWorx backing with water-based adhesive.

And the wall covering in the lounge area and restrooms is made with Duraprene, an earth friendly composite of reclaimed wood fibers fused with latex. A new environmental graphics package was introduced by Shook Kelley to enhance the experience, incorporating additional vibrant color throughout the store. A large, engaging and dynamic series of menu board panels, along with large custom framed vignettes containing food photography were also developed to promote the new menu and reinforce the concept of fresh food and ingredients.

Since opening in the fall of 2007, Just Fresh Kitchen Café has created a new niche in the nation’s food service industry. The new restaurant provides fresh, great-tasting food and the atmosphere of a table service restaurant with the speed and pricing of a quick service restaurant – all in a setting that’s friendly to the senses and the environment.
